I love tapas - a great way to share (and taste) a range of dishes. And there is no reason why you can’t do this at home - with a lovely glass of Rioja or homemade Sangria. A few non-traditional tapas have crept it - call it creative license: gluten free cooking is challenging enough that we should be bound by traditions.
