Asparagus with Vinaigrette

Ingredients:

Asparagus

Vinaigrette:

1 tbsp red wine vinegar

3 tbsp olive oil

2 tsp dijon mustard

Method:

  1. Preheat the oven to 180C.  Trim the asparagus stalks and lay them flat on a baking tray.  Drizzle with olive oil and bake for 12 mins.

  2. Whilst the asparagus are cooking, mix the vinaigrette ingredients in a small bowl.  Pour on the asparagus tips (or have the bowl on the side to dip the asparagus tips in).
