Stuffed Peppers

Ingredients:

2 x Sweet Pointed Red Peppers

100g feta

1 tsp oregano

Method:

  1. Pre-heat the oven to 180C fan.

  2. Slice the red peppers and cut off the top. Remove the seeds and place the pepper on a baking tray, with the slit on the side.

  3. Slice the feta. Add a layer of feta inside each of the red peppers. Sprinkle the oregano inside, and then close the pepper so the feta is covered.

  4. Bake for 30 mins. The skin of the pepper will be charred. Peel of the skin (you might want to use a sharp knife to pierce the skin - but the skin should peel off very easily) and serve.
