Spinach Pie

Ingredients:

2 tablespoons butter

2 cloves garlic, chopped

½ medium onion, chopped

140g fresh spinach

110g cream cheese

30g grated parmesan cheese

1 sheet gluten free puff pastry, softened to room temperature

1 egg, beaten

Method:

  1. Preheat oven to 220C.

  2. In a pan over medium heat, melt butter. Add the garlic and onions, cooking until translucent.  Add the spinach, salt, and pepper, cooking until spinach is wilted.  Add the cream cheese and parmesan stirring until mixture is evenly combined. Remove from heat and set aside.

  3. On a cutting board, smooth out the sheet of puff pastry and cut a 6 cm wide strip. Place several spoonfuls of the spinach mixture along the pastry, and then roll the sides up so that there still remains an opening.  Seal the ends and transfer for a baking sheet lined with parchment paper.  Brush the beaten egg on the top and sides of the pastry.

  4. Bake for 20-25 minutes, until pastry is golden brown.
