Brazilian Black Beans

Ingredients

1 large onion, finely chopped

1 garlic clove, finely chopped

1 carrot, finely diced

1 celery stick, finely diced

1 tsp ground cumin

1 tsp paprika

1.5 tsp tomato puree

2x 400g tins of black beans in water

1 vegetable stock cube

Method:

  1. Heat oil in a large saucepan, add the chopped vegetables and cook over a medium-low heat, stirring occasionally for 8-10 mins until softened.

  2. Stir in the spices and cook for a further 2-3 mins until they release their fragrance.  Add the tomato purée, the black beans and their liquid and the vegetable stock cube and give it a good stir.  Simmer for 10 to 12 mins to reduce some of the liquid.
