Sausage Rolls

Ingredients:

1 gluten free puff pastry roll (or make your own puff pastry)

400g sausages

3 tbsp mustard (ensure gluten free - Dijon is good)

1 egg beaten

Method:

  1. Unroll the puff pastry sheet out. Cut in half (length ways). Spread mustard just off centre all of the way down.

  2. Take the skin off the sausages and mix together. Divide the mixture in two and make two long sausages (each the length of the puff pastry sheets). Add each of the long sausages on top of the mustard.

  3. Fold the puff pastry over the sausage, and crimp the edge of both rolls with a fork. Brush both rolls with a beaten egg and cut slashes down the gluten free pastry.

  4. Cut to fit your air fryer basket and air-fry at 200C for 12-14 mins.

If baking in a conventional oven, chill in the fridge for at least an hour after step 3. Pre-heat the oven to 200C Fan. Bake for 20-25 mins until puffed and golden.
