Pork Loin with Pesto and Prosciutto

Ingredients:

Pork loin

8 slices of prosciutto

3 tbsp pesto

Method:

  1. Preheat the oven to 220C.

  2. Roll the pork loin in freshly ground pepper.

  3. On a large sheet of cling film, lay out the prosciutto slices to create a sheet.  Spread the pesto over the prosciutto to create a uniform layer.  Place the pork loin in the middle, and wrap the prosciutto around like a sausage (using the cling film to wrap tightly).

  4. Place the loin ‘sausage’ on a baking tray and place on the bottom of the oven for 30 mins.

  5. After 30 mins, baste the pork with the juices in the baking tray and put back in the oven for 5 extra minutes.

Wrap up the pork loin tightly
