Pork in Cream and Cheese Sauce
Ingredients:
500g pork fillet
2 red onions
200ml double cream (or soy cream)
200g grated cheddar
Method:
Preheat the oven to 200C
Cut the pork fillet into 2cm medallions. Line the medallions on the bottom of an oven proof dish (if you have more pork, keep it aside - the pork should not be more than a layer thick at this stage).
Add the onion on top of the pork, and then the cheese (as one even layer). If you have some left over pork, repeat this as a second layer (even if incomplete).
Bake the dish for 50 mins. After 50 mins, pour the cream on top, and cook for a further 15 mins.,
Serve with rice or gluten free pasta.
