Galette des Rois à la Frangipane

Ingredients:

2 sheets of Gluten Free puff pastry

100g caster sugar

140g ground almonds

2 eggs

75g unsalted butter, softened

1 egg yolk

1 porcelain fêve

Method:

  1. Pre-heat the oven to 180C Fan.  Use a pastry sheet to line a 30cm flan dish.

  2. In a bowl, mix the ground almonds, the sugar, 2 eggs and the softened butter.  Spread this mix on the flan dish and hide the fêve.

  3. Cover with the second pastry sheet, ensuring that all of the sides are sealed.  Score the top with a knife and paint with the egg yolk.

  4. Put in the oven for 20-30 mins. Serve hot or cold.

Traditional on 6 January - the person who finds the porcelain fêve in their portion becomes Queen or King for the day.
