Watermelon, Cucumber and Feta Salad

Ingredients:

180g watermelon

½ cucumber

½ bunch mint

100g feta cut into small cubes

1 tbsp balsamic glaze

Method:

  1. Chop 180g watermelon, the feta and the cucumber into chunks and tip into a bowl with the mint leaves (reserving a few for garnish). Season and pile on to a serving plate.

  2. Drizzle with 1 tbsp balsamic glaze, and decorate with the remaining mint leaves before serving.
