Crayfish Cocktail Sandwich

Ingredients:

200g cooked and peeled crayfish tails

1 tbsp dijon mustard

1/2 tbsp tomato ketchup

3 tbsp mayonnaise

1/2 tsp paprika

1/2 stick celery, finely diced

2 spring onions, finely chopped

Method:

Mix the mustard, ketchup, mayo and paprika. Stir in the crayfish, the celery and spring onions.

Great as a sandwich filling using my crusty white sandwich loaf.
