Gluten Free Langues de Chat

Ingredients:

60g stork

60g light brown sugar

pinch of salt

2 eggs

80g rice flour

zest of one lemon

Method:

  1. Preheat the oven to 180C (fan).  Prep a baking tray with greaseproof paper.

  2. With a whisk, cream the stork, sugar and salt.

  3. Mix in the eggs, one at a time, then add the rice flour and the the lemon zest.

  4. Put the mixture on a baking tray - make small spoonfuls well spaced out (as the mixture with spread out in the oven).  Cook for approximately 10 mind (the edges of the biscuit will be golden).  They are delicious on their own or with ice cream.
