Croque Madame

Ingredients:

8 slices of gluten free white bread

4 large slices of ham

4 eggs

30cl milk

160g comte cheese, sliced

60g butter, room temperature

30g gluten free plain flour

1/2 tsp grated nutmeg

Method:

  1. Prepare the béchamel. In a pan, melt 30g of butter and let it brown for 2 mins. Off the heat, add the flour and mix well with a wooden spoon. Put back over the heat and cook for a further 2 mins whilst continuing to mix. Slowly add the milk, whilst continuing to mix so that the milk is incorporated into the mixture. Once the béchamel is done (cream like consistency, not too liquid), add 40g of Comte and the nutmeg. Mix well until the cheese is melted.

  2. Butter four slices of bread with 20g of butter. Add a slice of ham on each one, followed by a slice of Comte. Cover with a slice of bread, and then the béchamel.

  3. Grill the toasties for 5 mins, until the béchamel is golden.

  4. Whilst the toasties are under the grill, fry 4 eggs in a frying pan (with some melted butter).

  5. To serve, place a fried egg on each toastie - et bon appétit!
