Broccoli and Parmesan Bites

Ingredients:

A handful of broccoli heads

Handful of grated parmesan

Olive oil

Method:

  1. Boil the broccoli heads in salted water until they are tender.  Drain well.

  2. Preheat the oven to 180C fan.

  3. Place the broccoli heads on a baking tray (I place them on a silicone baking mat).  Using the bottom of a flat glass, press down on the broccoli heads so that they resemble open fans.

  4. Generously sprinkle some parmesan on each head, and then spray with oil.  Bake in the oven for 16mins, until the cheese is melted and brown.
