Steak, Homemade Fries and Black Pepper Sauce
Ingredients:
1 tbsp aged balsamic vinegar
200ml cashew cream
4 large white potato
4 x flat iron steaks
1 beef stock cube
Method:
Preheat the oven to fan 200C. Boil a kettle. Leaving the skins on, cut the potatoes into fries. Place the fries on a lined baking tray and drizzle with 2 tsp oil; sprinkle with the sea salt and black pepper. Mix. Bake for 25-30 mins, until golden, turning halfway through.
Dissolve the stock cube in a jug with 50ml boiling water.
Heat a large frying pan with 1 tbsp oil on a high heat. Season the steaks with sea salt and place in the pan. Cook until golden brown (as a guide: 2-3 mins on each side for medium-rare or 4-5 mins on each side for well-done). Remove the steaks from the pan and leave to rest on a side plate.
While the steaks are cooking, reheat the saucepan used earlier on a medium heat. Add the cream, stock, vinegar and a generous amount of black pepper. Simmer for 4 mins, then remove from the heat, keeping warm.
Serve the steaks and fries with the black pepper sauce. Great with a side of slaw.
