Crispy Air Fryer Bang Bang Chicken Bites
Ingredients:
500g chicken breasts (2-3 chicken breasts), cut into 2cm cubes
2 tsp paprika
2 tsp garlic powder
2 tsp oregano
1 tsp salt
Crispy Coating:
2 eggs, beaten
2 cups cornflakes (crushed)
1 tsp paprika
1 tsp garlic powder
1 tsp oregano
Band Bang Sauce:
1/2 cup mayonnaise
1/3 cup sweet chilli sauce
1 tbsp hot sauce
1 tbsp sriracha
1 tbsp honey
1 tbsp rice wine vinegar
1 tsp paprika
Optional: small squeeze of lemon juice
Method:
Preheat air fryer to 190C.
In a medium bowl, season the chicken cubes with paprika, garlic powder, oregano, and salt.
In a separate medium bowl, mix the crushed cornflakes with paprika, garlic powder, and oregano.
Set up a dredging station with the beaten eggs in a small bowl, the crushed cornflakes, and seasoned chicken.
Start off by dipping the chicken cubes into the egg mixture, and then in the crushed cornflakes mix. Toss to ensure all sides of the chicken bites are well coated. Continue with the rest of the chicken and coating.
Spray the basket of the air fryer with olive oil spray, and place the coated chicken bites in a single layer in the basket of the air fryer. Lightly spray the tops with olive oil cooking spray.
Air fry at 190C for 13-15 minutes, or until golden and crispy.
While the chicken is in the air fryer, make the bang bang sauce: in a medium bowl, mix together the mayo, sweet chilli sauce, hot sauce, sriracha, honey, rice wine vinegar, paprika, and small squeeze of lemon juice (if using).
Once the chicken bites are done in the air fryer, place them into a large bowl and pour the bang bang sauce over them.
Toss to completely coat.
