Baked Apples
Ingredients:
4 Granny Smith apples
60 g soft brown sugar
50g figs, cut into small pieces
35g dried apricots, cut into small pieces
30g of chopped almonds
1 tbsp abricot jam
1/4 tsp of ground cardamom
1/4 tsp of ground cinnamon
30g butter
Method:
Preheat the oven to 180C . Butter a square dish.
In a small bowl, mix together the figs, dried apricots, jam, almonds and spices. Peel and core the apples. Roll them in the sugar and fill the hole with the mixture from the bowl. Place the apples in the dish, and add small cubes of butter on top.
Bake for 35-40 mins. The apples should feel tender. Serve hot with vanilla ice cream.
Can also substitute the figs, abricots, chopped almonds, jam, cardamom and cinnamon with mincemeat.
