Courgette Cakes

Ingredients:

1 medium courgette (zucchini)

50g grated cheese (cheddar)

30g gluten free flour

1 egg

Olive oil

Flat leaf parsley

Method:

  1. Wash and grate the courgette.  Squeeze out the excess water (I do it in a paper towel).

  2. In a bowl, mix the grated courgette, cheese, parsley and flour.  Add the egg, and mix with salt and pepper.

  3. Heat a little oil in a frying pan.  Put a large spoonful of the mixture into the pan.  Cook for 3-4 mins and then flip over for an additional 3-4 mins.

  4. Serve hot.
