Almond Crusted Shrimp
Ingredients:
400g prawns, peeled, deveined with tails removed
1 cup of shelled almonds
1/2 cup of breadcrumbs
1 egg white
Method:
Preheat the oven to 180C Fan. Line a large baking sheet with lightly greased parchment paper.
Place the almonds in a blender and crush until they resemble course breadcrumbs. Pour into a bowl and mix with the breadcrumbs
In a separate bowl, lightly beat the egg white.
Working with a few prawns at a time, dip them into the egg white and then in the almond mixture making sure that they are well coated. Lay on the parchment paper.
Lightly spray the prawns with cooking spray, and bake for 10 mins, before turning over and bake for 10 extra minutes. Serve with sweet chilli sauce.
