Crab Cakes

Ingredients:

150g lump crab meat

1/3 cup of mayonnaise

1 egg

2 tbsp chopped spring onion

1/2 tsp of lime zest

1 tsp of lime juice

2 tbsp of gluten free bread crumbs

Method:

  1. In a mixing bowl, combine all of the ingredients and chill for 15 minutes to allow the mixture to thicken slightly.

  2. Heat a large heavy frying pan on a medium-hot heat.  Add a little oil.  Using circular cookie cutters, poor some mixture into the pan and allow to cook for 4-5 minutes, before turning over for another 4-5 minutes.  Serve and eat.
