Vietnamese Pork and Lemongrass Patties

Ingredients:

450g lean, minced pork

25g shallots, chopped

2 stalks of lemongrass, trimmed and very finely chopped

1/2 tsp salt

lots of freshly ground pepper

Method:

  1. Put everything into a food processor, season well with salt and pepper and whizz for just a few seconds.  Heat a frying pan and cook a tiny piece the check the seasoning (adjusting if necessary).

  2. Make the meat mixture into patties up to 8cm in diameter and pan grill for 5 mins on each side.
