Slow Cooked Ham and Bean Stew

Ingredients:

1 carrot, chopped

2 peppers, chopped

1 leek, chopped

1 tin of butter beans

1 tin of chopped tomatoes

2 tbsp garlic oil

2 tbsp tomato puree

1 tbsp plain gluten free flour

1 gluten free stock cube with 200ml water

1 tsp gluten free Worcestershire sauce

1 tbsp smoked paprika

1 tbsp mixed herbs

1/2 tsp cumin

1/2 tsp chilli flakes

1/2 tsp black pepper

800g-1kg gammon

Method:

  1. In a slow cook pot, add the vegetables, tins, garlic oil, tomato puree, flour, stock cube (with water), Worcestershire sauce and spices.

  2. Add the gammon on top. Put the lid on and cook on high for 6-8 hours (or low for 10-12 hours).

  3. Shred the gammon with a couple of forks, and serve.
