Seafood Curry

Ingredients:

1.5 mugs of basmati rice

1 mug of defrosted frozen peas

2 pieces of salmon steak, cut into bit sized pieces

250g cooked prawns

Sauce:

1 fat red chilli, deseeded

3 cloves of garlic

2 tbsp freshly grated ginger

30g fresh coriander

1 onion, cut into chunks

1 tsp black mustard seeds

1 tsp curry powder

1 tsp cinnamon

1 tsp turmeric

3 tomatoes

400ml tin of coconut milk

1 tbsp raw honey

Method:

  1. Put the rice in a saucepan with 3 mugs of boiling water.  Simmer for 9 mins.  Leave with lid on until needed.

  2. To make the sauce, put everything in a food processor and blitz.  Put in a wok, add the peas and bring to the boil.  Simmer for 5 minutes.

  3. Add the fish and simmer gently for 2 mins.  See with the rice.
