Prawn Toast

Ingredients:

6 slices gluten free white bread

180g raw king prawns

1 egg white

3 spring onions

2 tsp chopped ginger

2 tsp gluten free soy sauce

1 tsp toasted sesame oil

3-4 tbsp sesame seeds

Method:

  1. Add the king prawns, egg white, spring onions, ginger, soy sauce and sesame oil to a food processor and blitz until it forms a smooth paste.

  2. (optional) Cut the crusts off of the gluten free bread and then cut each slice in half diagonally so you have two triangles of bread.

  3. Spoon around 1 tbsp of the prawn mixture onto each triangle of bread and smooth it into a thick layer, covering the whole of one side.

  4. Sprinkle the sesame seeds liberally over the top of the prawn paste and gently press them down into the mixture with your hands so they don't all fall off.

  5. Place the triangles in the basket of an air fryer. You don’t want them to touch (and will probably need to make several batches). Cook at 200C for 12 mins.

  6. Repeat until all of the slices are cooked and then serve hot with sweet chilli sauce for dipping.
