Mini Egg Fudge

Ingredients:

400g white chocolate

397g condensed milk (one tin)

400g Mini eggs

Instructions:

  1. Line an 8x8 inch tin with parchment paper.

  2. Gently melt the white chocolate and condensed milk in a bowl over a pan of boiling water, making sure that the bowl does not touch the water.  Keep mixing until fully combined, thickened and the fudge starts coming away at the edge (this takes a couple of minutes).  Add around 300g of mini eggs, and mix them in evenly.

  3. Pour the fudge into the lined tin and smooth out.  Decorate with the remaining mini eggs - try not to press or move the chocolate pieces around too much as the heat from the fudge will start to melt them.

  4. Leave in the fridge until fully set - at least 3 hours, and then chop into squares.
