Honey and Ginger Pork Noodles

Ingredients:

1 red chilli

25g honey

100g brown rice noodles

2 spring onion

300g free-range pork mince

2 tsp rice wine vinegar

2 tsp black sesame seeds

2 tbsp sesame oil

180g tenderstem broccoli

2 tsp chilli paste

2 tsp ginger puree

4 tsp garlic puree

Method:

  1. Boil a kettle. Cut one of the spring onions into 2cm lengths. Heat a medium frying pan with half of the sesame oil on a high heat. Add the pork and fry for 2-3 mins until it begins to turn deep golden brown. Add the garlic and ginger purées along with the chilli paste then fry for another 1 minute until fragrant.

  2. Transfer the pork to a bowl, add the remaining sesame oil to the pan and fry the broccoli for 2 mins each side, until beginning to char. Return the pork to the pan along with the honey and vinegar. Stir everything together, add 100ml water and boil for 2-3 mins until the liquid has gone and the broccoli has softened.

  3. Meanwhile, half fill a medium saucepan with salted boiling water. Bring to the boil and place the noodles into the pan. Gently separate the noodles with a fork and boil for 3 mins. Drain well.

  4. Finely slice the remaining spring onion. Finely dice the chilli (remove the seeds for less heat). Toss the drained noodles through the pork mince to coat them then transfer to plates. Garnish with the sliced spring onion, diced chilli, and sesame seeds.
