Guacamole

Ingredients:

For the chilli paste:

1 tbsp finely chopped red onion

1 tbsp chopped fresh coriander

2 tsp finely chopped jalapeno peppers

1 tsp salt

For the guacamole:

3 medium ripe but firm avocados

3 tbsp diced cherry tomatoes

2 tbsp chopped fresh coriander

1 tbsp finely chopped red onion

Method:

  1. Make the chilli paste. In a mortar and pestle, blend the onion, coriander, jalapeño and salt, until you have a paste.

  2. Cut each avocado in half, remove the stone and scoop out the flesh into a bowl.  Mash the flesh with a fork.  Gently fold in the paste.  Add the tomato, coriander and chopped red onion and fold in gently.  Serve immediately.
