Garlic Chicken and Broccoli Rice Noodle Stir Fry

Ingredients:

300g rice noodles

4 chicken breast fillets cut into bite sized pieces

3 cloves of garlic, minced

400g tenderstem brocolli

30ml gluten free soy sauce

1 tbsp sesame oil

juice of one lime

Method:

  1. Cook the rice noodles according to the pack instructions, then drain and set aside.

  2. In a wok, heat 1 tbsp of vegetable oil over a high heat.

  3. Add the chicken, season with salt and pepper and stir fry for 3 mins until lightly golden.

  4. Add the garlic and stir fry for another 30 seconds.

  5. Add the broccoli and soy sauce along with 50ml of water, and stir fry for another 3-5 mins, until the chicken is cooked and the broccoli is tender.

  6. Add the cooked noodles and sesame oil, toss everything together for a few minutes, then divide between service discuses and finish each with a squeeze of lime juice.
