Slow Cooker Chicken Casserole

Ingredients:

2 tbsp plain gluten free flour

4 large chicken thigh fillets, chopped into strips

1-2 tbsp olive oil

4 streaky bacon rashers (chopped)

2 large carrots (chopped)

1 large onion (chopped)

500g small potatoes (halved)

1 tbsp Dijon mustard

2 tsp dried thyme

1 tso dried sage

500ml gluten free chicken stock

100ml white wine

Method:

  1. Coat the chicken thighs in the gluten free flour. Heat the oil in a frying pan and then fry the chicken and chopped bacon for a couple of minutes on each side until browned.

  2. Add the browned chicken and bacon to the slow cooker.

  3. Brown the carrots and onions in the same pan, then add to the slow cooker with the potatoes and mix. Then add the rest of the ingredients and mix to combine everything.

  4. Place the lid on and cook for 3-4 hours on high / 6 hours on low. Freeze and leftovers for an easy meal another day.
