Carrot and Coriander Soup

Ingredients:

10 carrots, chopped (skin left on)

3 potatoes, chopped (skin left on)

2 good handfuls of fresh coriander, chopped, plus extra to garnish

1 onion, chopped

1 tsp ground coriander

1.3 litres vegetable stock salt and pepper, to taste

Method:

  1. Place all the ingredients in the slow cooker, stir and season to taste. Cook on high for 4 hours, then blitz the soup with a handheld blender until smooth.

  2. Pour into bowls and garnish with the extra coriander.
