Walnut Cake

Ingredients:

140g walnuts

90g light brown sugar

3 eggs and one egg white

80g sunflower oil

25g (gluten free) buckwheat flour

35g gluten free plain flour

Method:

  1. Preheat the oven to 180C Fan.  Chop the walnuts into bits.  Separate the egg yolks from the whites.

  2. Beat the sugar and the egg yolks, until you get a light mixture.  Add the oil, the flours and the nuts.

  3. Whisk the egg whites with a pinch of salt and sugar, until you get peaks that hold.  Fold into the other mixture carefully.

  4. Put into a circular cake mould (24cm) and bake for 30 mins.
