Sweet Potato and Coconut Soup
Ingredients:
6 sweet potatoes, chopped
1 onion, chopped
1 red pepper, chopped
750ml vegetable stock
400ml tin of reduced-fat coconut milk
3 garlic cloves, chopped
1 tsp lemongrass paste
1 tsp ground coriander salt and pepper, to taste
Method:
Place all the ingredients in the slow cooker, stir and season to taste. Cook on high for 3 hours, then blitz the soup with a handheld blender until smooth.
