Seared Scallops with Chorizo

Ingredients:

6 scallops

4 slices of chorizo, quartered

a knob of butter

1/2 lemon

Method:

  1. Heat a splash of olive oil in a large non-stick pan over a medium heat. Add the chorizo and fry for about 2 mins or until cooked. Move the chorizo to the side of the pan. Add a knob of butter and the scallops to the empty space. Cook for around 3 mins, turning half way.

  2. Remove the pan from the heat. Add a squeeze of lemon juice and toss to coat, allowing the scallops to cook in the hot pan for a further 30 seconds.

  3. Serve with either mash or yellow split pea puree with buttered onions and caper salsa.
