Parmesan and Pistachio Crusted Salmon

Ingredients:

4 salmon filets

1 tbsp honey

1 tbsp Dijon mustard

2-3 cloves of garlic, minced

1/4 cup grated parmesan

1/4 cup gluten free breadcrumbs

1/2 cup crushed pistachios

a pinch of salt, pepper, garlic powder, onion powder and paprika

lemon slices

Method:

  1. Pat down the salmon filets.  Mix the honey, garlic and mustard together and rub on the salmon.

  2. Mix together the parmesan, gluten free breadcrumbs, pistachios and seasonings in a small bowl.  Coat the salmon in the pistachio curst then place into an air fryer top off with a lemon slice.  Fry at 200C no preheat for 7-9 mins (depending on the thickness).  Cover with tin foil half way through if it starts to brown.
