Meatballs in Tomato Sauce

Ingredients:

For the meat balls:

500g of minced beef

500g of minced pork

four slices of gluten free bread (white)

3 garlic cloves

2 eggs

1 onion

For the sauce:

2 cloves of garlic

1 onion

1 tsp mixed herbs

2 tins of chopped tomatoes

2 tbsp of tomato paste

Method:

  1. Chop the garlic and onions into small pieces (for both the meatballs and sauce).  Blitz the bread in a blender so you have small soft pieces.

  2. In a bowl, mix the minced beef, minced pork, the broken bread, 1 chopped onions, 3 minced garlic cloves and the 2 eggs.  You want the mixture to be blended.  Make small balls out of this mixture (I use an ice cream scoop).  Over a medium heat, brown the balls in batches in a pan with a little oil.  Remove the balls when sealed to give space for a new batch (you don’t want to do too many at the same time).

  3. In a pan, make the sauce.  Soften the onion and garlic in a little oil - this should take approx 5 mins on a medium heat.  Add the herbs for a couple of minutes before adding the chopped tomatoes and tomato paste.

  4. Once the sauce feels hot, add the meatballs, ensuring that they are covered by the sauce (add water if necessary) and allow to cook for a further 20 mins.  It is then ready to serve.
