Light Coconut Bites
Ingredients:
3 egg whites
175g castor sugar
200g desiccated coconut
Method:
Pre-heat the over to 150C (fan). Line two baking trays with baking sheets.
Put the egg whites and the sugar into a pyrex bowl. Place on top of a smaller pan with boiling water (the water shouldn’t touch the bowl) and whisk whilst the mixture heats up (it should not boil - stop when around 80C). Take the bowl off the heat, and continue to whisk until the mixture cools.
Add the desiccated coconut and mix. With two spoons, form around 30 small balls on the baking sheets, and bake for 12-15mins (they should remain white). Leave to cool before eating.
