Lamb and Lentil Bhuna

Ingredients:

200g diced lamb

400g tin of green lentils, drained

400g tin of chopped tomatoes

salt and pepper, to taste

Bhuna curry paste:

1 onion, chopped a few spring onions,

chopped

1 red or green chilli, sliced, with seeds

handful of fresh coriander, chopped

4 garlic cloves, crushed

2.5cm fresh ginger, grated

1 tsp curry powder

1 tsp ground cinnamon

1 tsp ground turmeric

1-2 curry leaves

3 tbsp olive or rapeseed oil

Method:

  1. Place all the curry paste ingredients into a Nutribullet or food processor and blitz to a smooth paste.

  2. Place the curry paste and all the remaining ingredients in the slow cooker, stir and season to taste. Cook on low for 7-8 hours.
