Garlic Chicken and Broccoli Rice Noodle Stir Fry
Ingredients:
300g rice noodles
4 chicken breast fillets cut into bite sized pieces
3 cloves of garlic, minced
400g tenderstem brocolli
30ml gluten free soy sauce
1 tbsp sesame oil
juice of one lime
Method:
Cook the rice noodles according to the pack instructions, then drain and set aside.
In a wok, heat 1 tbsp of vegetable oil over a high heat.
Add the chicken, season with salt and pepper and stir fry for 3 mins until lightly golden.
Add the garlic and stir fry for another 30 seconds.
Add the broccoli and soy sauce along with 50ml of water, and stir fry for another 3-5 mins, until the chicken is cooked and the broccoli is tender.
Add the cooked noodles and sesame oil, toss everything together for a few minutes, then divide between service discuses and finish each with a squeeze of lime juice.
