Courgette and Parmesan Thins

Ingredients:

One courgette

3 tbsp parmesan

olive oil

Method:

  1. Preheat the oven to 200C.

  2. Thinly slice the courgette, and lay the slices on baking trays (one slice thick, spaced out).  Spray the slices with olive oil, and then cover generously with parmesan.

  3. Bake for 8-10 mins.  The tops of the courgette slices should be golden brown.  Serve hot.
