Cherry Clafoutis

Ingredients:

400g cherries

4 eggs

150g sugar

200g gluten free flour

1/2 tsp Xanthan gum

Pinch of salt

50cl milk

20g butter

Method:

  1. Preheat the oven to 160C Fan.  Butter the tart dish.  Wash and pit the cherries.

  2. In a bowl, mix the eggs, sugar, some of the flour, the Xanthan gum and the salt.  Pour in some of the milk, mix and then gradually add the rest of the milk and flour.

  3. Place the cherries on the tart dish.  Pour the mixture on top and bake for 30 mins.

  4. Allow the clafoutis to cool down before serving.
