Avocado Cheat Hollandaise Sauce

Ingredient:

One avocado

One egg yolk

3-4 sprigs of fresh tarragon

Green part of a spring onion, sliced

half a lemon juice

1/3 cup of white wine vinegar

pinch of salt and pepper

100ml water

Method:

  1. In a pan, bring to the boil the water, lemon juice, spring onions, white wine vinegar, salt and pepper.

  2. In a blitzer, add the liquid from the pan to the avocado (peeled and destined), egg yield and tarragon.  Blitz adding water to get the right consistency.
