Asian Chicken Soup

Ingredients:

3 chicken stock cubes

2 lemongrass sticks

6 whole star anise

150g rice noodles

2 chicken breasts/thighs

A bunch of basil

Method:

  1. Put the stock cubes in a pan with 2 litres of water, the whole star anise and lemongrass sticks chopped up into thin slices.  Cook on a medium heat for 12 mins

  2. Add the chicken chopped up into bite sized portions.  Cook for 5 mins.  Then add the rice noodles and cook for an additional 5 mins.

  3. Remove from the heat.  Add the basil leaves, add salt and pepper (to taste) and serve.
