After Eight Ice cream

Ingredients:

1 cup of double cream

1 cup of sugar

1.5 cups of milk

2 large eggs

1 tsp vanilla extract

57g After Eight mints (7 squares) or other mint Chocolate

Method:

  1. Melt the After Eight chocolates (I use a Bain Marie). Stir constantly until you have a smooth chocolate mixture.

  2. Whisk the eggs in a mixing bowl until light and fluffy (1-2 mins). Whisk in the sugar, a little at a time, then continue whisking completely until it is completely blended (about a minute more). Pour in the cream, milk and vanilla and whilsk until it is all blended.

  3. Pour the chocolate mixture into the cream mixture and blend (if the chocolate hardens in the cream, head the chocolate again with a couple of tea-spoons of the cream mixture over hot water). Cover and refrigerate until cold (1-3 hours).

  4. Pour the mixture into the ice cream machine, and follow the machine’s instructions. Enjoy!
