Bacon Wrapped Cod
Ingredients:
500g fresh cod fillet
90g streaky bacon
1/2 red onion thinly diced
3 tbsp capers
juice of 1/2 lemon
4 tbsp olive oil
Method:
Season the cod all over lightly with salt and pepper. Roll or fold the cod so that it looks like a small roast. Wrap the bacon around it, securing the bacon with a skewer or toothpicks, so the cod is almost completed covered with the bacon (except the ends).
In a pan, heat 1 tbsp of extra-virgin olive oil over a medium heat. When the oil is hot, madd the fish and brown it on all sides (which may take 6 mins). Continue cooking the cod until it is cooked through, about 16 minutes, tuning it occasionally so it doesn’t burn.
While the cook is cooking, make the sauce. Mix together the onion, capers, olive oil and lemon juice in a small bowl.
When the fish is cooked, transfer it to a famed serving platter and let it sit for about 4 mins. Remove the skewers/toothpicks. Slice the fish in think slices, and serve on top of rice and peas. Pour some of the sauce on top.
