Asian-Style Sea Bass

Ingredients:

3cm piece of ginger, grated

2 tsp lemongrass paste

1 tbsp gluten free soy sauce

3 garlic cloves, minced

4 sea bass fillets

2 birds eye chilli, thinly sliced

1 spring onion thinly sliced

Rice and broccoli to serve

Method:

  1. Preheat the oven to 180C fan.

  2. Mix the ginger, lemon grass, soy sauce  and 1 tsp of the chilli.  Lay the sea bass fillets, skin down, on a large sheet of tin foil (so that you can wrap the fish in parcels).  Top the fillets with the paste and wrap up as a loose parcel (you want the fish to steam a whilst cooking).  Bake for 12 mins and then allow to cool for 10 mins.

  3. Whilst the fish is cooking, make your rice.  Pan fry the broccoli for 4 mins in a hot frying pan (no oil).

  4. Serve the sea bass with the juices from the parcels, and some spring onions and chilli.
